Recipe Method
1. Make a curry paste. In the small bowl of a food processor put the first 10 ingredients and blend to a paste - peeled and chopped ginger, green chilli (deseeded and roughly chopped) crushed garlic, peeled and chopped shallot, ground coriander and cumin seeds. Lemongrass stalks (outer layer and tough ends removed, chopped), lime juice and grated zest, and oil (plus extra to saut
