1 Place the couscous, cumin, smoked paprika. Stir together. Pour over boiling water just enough to cover the couscous. Place a plate on top of bowl and leave for 10 minutes, so the couscous absorbs the water.
2 Meanwhile, finely chop the onion, cucumber, tomatoes, parsley, mint, corinader and parsley.
3 Lightly fluff the couscous with a fork. Add the chopped vegetables and herbs and mix well. Add the olive oil and the lemon zest and lemon juice.
4 Garnish with fresh basil.
A great picnic food, served with tomato tartlets, tahini muffis and sticky onion chutney!
